Ein Matjeshering wird optimal drei bis f\u00fcnf Jahre alt. Der dann noch \u201ejungfr\u00e4uliche\u201c (holl\u00e4ndisch: \u201eMeisjes\u201c: M\u00e4dchen) Hering erlangt seinen charakteristischen Geschmack durch einen speziellen Reifungsprozess. Durch die Reifung werden im Fisch nat\u00fcrliche Enzyme freigesetzt, die den Hering reifen lassen und den Eigengeschmack des Matjes ausmachen\u00a0(Frerichs, 2016, S. 13f.).<\/p><\/div>\n\t\t\t<\/div><div class=\"et_pb_module et_d4_element et_pb_cta_1 et_pb_promo  et_pb_text_align_center et_pb_bg_layout_dark\">\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t<div class=\"et_pb_promo_description\"><h2 class=\"et_pb_module_header\">\u201eJeder Matjes ist ein Hering \u2013 aber nicht jeder Hering wird auch ein Matjes.\u201c (Frerichs, 2016)<\/h2><\/div>\n\t\t\t\t\n\t\t\t<\/div><div class=\"et_pb_module et_d4_element et_pb_text et_pb_text_1  et_pb_text_align_center et_pb_bg_layout_light\">\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t<div class=\"et_pb_text_inner\"><p style=\"text-align: left\">Der Heringsfang reicht bis in das 7. Jahrhundert zur\u00fcck und war w\u00e4hrend Fastenzeiten oder Hungern\u00f6ten die Lebensgrundlage f\u00fcr die Menschen. Durch die gro\u00dfe Verf\u00fcgbarkeit des Herings gilt dieser bis ins 20. Jahrhundert als Arme-Leute-Essen, was sich durch \u00dcberfischung und sinkenden Fangzahlen jedoch schlagartig \u00e4nderte. Heutzutage werden die Fangzahlen politisch reguliert und der Fischbestand hat sich erholt\u00a0(Frerichs, 2016, S. 17.).<\/p>\n<p style=\"text-align: left\">Die Saison des Matjes beginnt Ende Mai, Anfang Juni und die deutsche Matjeszeit wird traditionell in Bremen er\u00f6ffnet, wo auch offiziell die \u201eMatjes-Tour de Deutschland\u201c beginnt. Als Tiefk\u00fchlware oder konserviert in Dosen ist Matjes aber das ganze Jahr \u00fcber in den Supermarktregalen zu finden.<\/p>\n<p style=\"text-align: left\">Traditionell wird Matjes auf einer Scheibe Schwarzbrot mit Zwiebelringen gegessen oder auch mit einer Sahneso\u00dfe serviert, was dann die \u201eHausfrauenart\u201c ist. Gerne wird Matjes auch mit Pellkartoffeln und gr\u00fcnen Bohnen gegessen\u00a0(Gutmann, 2009, S. 98-101).<br \/>Neben dem Klassiker \"Matjes nach Hausfrauenart\u201c gibt es rund um den beliebten Hering zahlreiche Neuinterpretationen. Von der Kombination mit Roter Beete, Birne, Rhabarber, Tr\u00fcffel bis hin zu Matjes-Sushi findet man zahlreiche kreative und vor allem k\u00f6stliche Variationen rund um den scheinbar \u201elangweiligen\u201c Fisch (Frerichs, 2016, S. 107-135).<\/p><\/div>\n\t\t\t<\/div><div class=\"et_pb_module et_d4_element et_pb_text et_pb_text_2  et_pb_text_align_center
